【how to boil dumpling - jiaozi?】

1,use a wok instead of a cylinder-like pot, if you can.

2,   fill the wok with water to the 2/3 of its volume capacity.

3,   do not dump the jiaozi in the wok, till it's boiling.

4,  put the jiaozi  one by one in the water, do not dump them at once.

5,  put the lid on the wok, stay at the stove - wok,

6,  stir carefully do not let the jiaozi get stuck on the bottom of the wok.

7,  pour about 1 oz cold water after the wok boils, and repeat this step 2 more times after each boiling.

8, the total boiling time is about 10-15 minutes. 

9,  turn off the stove, get the jiaozi out of the wok with a skimming dish / strainer, into a plate or bowl.

10,  now the jiaozi is ready to be served.
