One dish meal 碟頭飯 - braised pork belly with rice
Ingredients - 3 thick slices of pork belly (marinated with 2 tbs light soy sauce for 30 minutes), 1 fried egg (over easy), button mushrooms (saute in olive oil, season with salt and pepper), pickled radish, sweet basil.
Braising pork belly - heat 1 cup of oil, put in pork belly slices and fried at medium heat for about 5 minutes, remove and set aside.
Leave 2 tbs oil in the pan, add 2-3 slices of ginger, a few cloves of garlic, 4-5 dried chili peppers, 1-2 star anise, 1/2 tsp Sichuan peppercorns, stir until fragrant. Add 1 meat braising herbs packet, 5-6 tbs cooking wine, 4-5 tbs light soy sauce, 2 tbs dark soy sauce, 2 tbs rock sugar, 3 cups of water and bring to boil.
Add pork belly slices, braise at medium low heat for about 60 minutes.
On a large serving plate, place a bowl of rice at the center, arrange pork belly, fried egg, saute mushrooms, pickled radish and sweet basil around the sides, pour some sauce on the rice.
