骰子遊戲聚會的菜,忙了我5個小時。全是老美鄰居女人,以 finger food為主。

上麵兩個菜是我第一次試,非常受歡迎。
芒果菠蘿色拉
櫻桃番茄奶酪 (Mozzarella) 球加 Rum 酒
奶酪塊 (Cheddar)
各種熟肉片
Artichoke Spinach Dip
Dip 配烤好的 Pita 薄片
學做蟹肉avocado壽司。 跟其它有些意大利特色的菜不太配,一半人也沒吃。

玉米小麵包
Ingredients:
DRY
1. 2 cups yellow cornmeal mix
2. 1 cup all-purpose flour
3. ½ teaspoon baking powder
4. ½ teaspoon baking soda
5. 3 tablespoons brown sugar
6. 1 teaspoon salt
7. 1 teaspoon cayenne
WET
8. 2 tablespoons honey
9. 3 large eggs, lightly beaten
10. 2 cups buttermilk
11. ½ cup butter or margarine, melted
TOPPING
12. 1 cup crumbled feta cheese
13. ¾ cup coarsely chopped black olives
14. ¾ cup grape tomatoes, cut in half
15. 1 Tablespoon coarsely chopped fresh rosemary
Preparation:
Preheat oven to 400°F. Mix together dry ingredients (1-7), then stir in wet ingredients (8-11). Spoon mixture into well greased (Pam spread) backing cups, 2/3 full. Bake 5 minutes in oven. Then sprinkle with feta cheese, olives, tomatoes, and lastly top with rosemary. Turn the oven to 375°F, continue bake 20-25 minutes or until golden brown. It makes about 20.

番茄湯 (Modified La Madeleine's Tomato-Basil Soup)
Ingredients:
4 cups fresh tomatoes (8-10), cored, peeled, and chopped or canned whole tomatoes, crushed
2 cups tomato juice (canned)
2 cups clear chicken broth
14 fresh basil leaves
½ cup heavy cream (can replace with whole milk)
¾ cup soft tofu puree
1 stick (4tbls) sweet unsalted butter (or olive oil plus 1tbls sugar)
Pinch of salt
1/4 teaspoon cracked black pepper
Some lemon juice
Directions:
1. Combine tomatoes, juice and stock in saucepan.
2. Bring to boil, then simmer for 30 minutes, cool.
3. Puree, along with the basil leaves, in small batches in a blender or food processor.
Return to saucepan and add cream and butter, while stirring over low heat. Garnish with extra basil leaves and serve with your favorite bread.
芒果菠蘿色拉:
Ingredients
2 large mangoes, ripe but still firm, peeled, cored
1/3 pineapple, peeled and cored
1/4 green bell pepper, seeded
¼ red bell pepper, seeded
1/2 medium red onion, peeled
3 jalapeno peppers, seeded and minced
1/3 cup chopped fresh cilantro
1/4 cup freshly squeezed lime juice and/or zest
Salt pepper for taste
Directions
Cut mangoes, pineapple, bell pepper, and red onion into long think slices, Combine all ingredients in a large bowl, Cover and refrigerate for 2 hours before serving.
乳酪小蛋糕
2 (8 oz.) pkg. Philadelphia cream cheese (I used 1/3 less fat ones)
3/4 c. sugar
3 eggs
1 tbsp. lemon juice
1 tbsp. vanilla extract
18 vanilla wafers (normally near bananas at the grocery stores)
Cupcake baking papers (use tin muffin baking pans)
Some pie filling (cherry, strawberry, or blueberry)
Put a Vanilla wafer at bottom of each cupcake cup. Mix well all the ingredients. Fill cup 2/3 full with cheese mixture and bake 18 minutes at 375F. After cool, put pie filling on top of each one. Yields about 18-20.
