昨天請兩家好朋友來家裏晚餐,這次煮尼泊爾菜。其中一位客人是中印混血,對中國菜和印度菜都非常熟悉,最後的總結是,“尼泊爾菜像印度菜多過中國菜。”
涼拌黃瓜
兩位女生客人都超愛這道菜。
紅蔥, 大蒜, 香菜, 芝麻, 花椒, 檸檬汁,辣醬。芝麻烤香,黃瓜先用鹽扮,擠幹水分,再和其他料一起扮。
小扁豆湯
最普遍的扁豆湯,豆香混合咖喱香,好喝。
1 cup red lentil
1/2 cup chopped onion
1 tablespoon garlic paste
1 tablespoon ginger crushed
1 teaspoon turmeric powder
1 teaspoon cumin powder
Salt to taste
全部放入慢鍋一鍋燉。
馬鈴薯豆子筍湯
味道酸酸辣辣的一道湯。老公很喜歡。
- potato (4-6)
- Onion (1 medium sized, finely sliced)
- Cumin Seeds (1 tea spoon)
- Fennel Seeds (1 tea spoon)
- Fenugreek Seeds (1 tea spoon)
- Cumin-Coriander Powder (1 table spoon)
- Schezwan (Timur) Powder (1/2 table spoon)
- Serrano Pepper/ Green Chilies (2-3, finely chopped)
- Tomatoes (2, medium sized, finely chopped)
- Black eyed-Peas (1/2 cup)
- bamboo shoot (2 cup)
- Ginger-garlic Paste (1 table spoon)
- Turmeric Powder (1/2 tea spoon)
- Salt (according to taste)
- Oil (3 table spoons)
- Water (3 cups)
做法:用油先炒香香料和洋蔥,再加入馬鈴薯和筍子,豆子。還蠻好喝的,第二天味道更好。
香烤花菜
香香辣辣,很惹味。
- 1 bunch cauliflower, chopped into florets
- ½ large red onion, diced
- ¼ cup olive oil
- ½ tablespoon curry powder
- ½ tablespoon garam masala
- ½ tablespoon fennel seed
- ½ teaspoon crushed red chile flakes
- 1 teaspoon salt
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon ground pepper
- 1 cup frozen peas
- ¼ cup cilantro, chopped
全部混合,烤箱375度25分鍾。
烤雞翅
提前醃好味道過夜。奶香咖喱香四溢,一下就被消滅光光。烤400度30分鍾。
- 2 1/2 to 3 lbs. chicken
- 1 1/8 tsp. salt
- 1 tbsp. fresh ginger
- 3 large garlic cloves,
- 1 cup plain yogurt, stirred
- 2 tbsp oil
- 1 tsp. Nepali Garam Masala
- 1 tsp. ground cumin
- 1 tsp. ground turmeric
- 1 tsp ground Sichuan pepper
咖喱羊肉
雖然香料看起來很多,不過我有兩個很愛幫忙的小幫手。他們兩個搶著量香料,放香料,站在小凳子上攪拌,玩得很開心。電壓鍋很好用啊,全部料放進去攪拌,開高壓25分鍾剛剛好。這道羊肉是當晚幾個男生最愛的菜,香極了。
- Mutton (2 lbs)
- Cumin Seeds (2 tea spoons)
- Fenugreek Seeds (1 and 1/2 tea spoons)
- Fennel Seeds (2 tea spoons)
- Cloves (3-5)
- Black Mustard Seeds (2 tea spoons)
- Cinnamon stick (2, halved)
- Salt (According to taste)
- Turmeric powder (2 tea spoons)
- Onion (1 large, finely sliced)
- Red Chilies (1-3)
- Oil (half cup)
- Tomato (1 large, finely chopped)
- Cumin Powder (1 table spoons)
- Coriander Powder (1 table spoons)
- Meat Masala (1 table spoons)
- Ginger-Garlic Paste (2 table spoons)
- Water (3 cups)
辣炒小芥藍
幹辣椒用油爆香,下小芥藍加鹽爆炒。
米布丁
香甜軟糯,很受歡迎呢。
1/2 stick butter
1 cup half and half
1 cup whole milk
1 can evaporated milk
1/3 cup sugar
1/2 cup shredded fresh coconut
大火煮開,加一杯米,再煮40分鍾,加
6-8 pods of cardamom
8-10 cloves
3 tablespoons raisins
最後用腰果點綴。
