三年前去匈牙利玩的時候,我們一家都超喜歡匈牙利菜,雖然奶油很重,(可能多半是豬油!),實在不宜多吃。可是每每美食當前,我們又不顧一切地撲騰上去,什麽身材,減肥,通通都被扔到九霄雲外。這個周末天氣又濕又冷,請了大學好友來聚聚,就來煮一頓我們喜愛的匈牙利菜吧。
匈牙利菜最大的特點就是用很多很多紅椒粉,幾乎每個菜都看起來紅豔豔的。(可以在Wholefoods買到匈牙利產紅椒粉。)
紅燒牛肉Goulash匈牙利最有名的菜就是Goulash,紅燒牛肉。我找到一個很正宗的
方子,成品果然鮮香濃鬱。
紅椒雞Chicken Paprikash在電影“When Harry Met Sally"裏麵有一場戲,Harry用東歐口音搞笑學說,"Waiter, there is too much pepper in my paprikash. But I would be proud to partake of your pecan pie.”這個紅椒雞也是匈牙利代表菜,用了匈牙利最有名的兩種調料--紅椒粉和酸奶油。

2 tbls lard or oil
2 med. Onions, sliced
1 lb yellow sweet peppers, seeded and sliced
3 large, ripe tomatoes, peeled, seeded, and diced
½ tbls sugar
½ tbls salt
1 tbls paprika
Heat the lard, add the onions, and cook over low heat five minutes. Add the pepper slices and cook for an additional 15 minutes. Add the tomatoes, sugar, salt, and paprika. Cook ten to 15 minutes more.
Adjust sugar and salt to taste.

1/2 teaspoon salt
3/4 cup water
2 cups all-purpose flour
1 large pot filled with salted boiling water
Hungarian Plum Cake 李子蛋糕很容易做的甜點,鬆軟香甜,非常好吃。
INGREDIENTS
Unsalted butter, for pan
1 cup flour
1 tsp. baking powder
½ tsp. kosher salt
1 cup sugar, plus 2 tbsp. for sprinkling
2 eggs, lightly beaten
1 cup plain yogurt
? cup canola oil
1 tsp. vanilla extract
8 ripe plums, halved and pitted
¼ tsp. ground cinnamon
INSTRUCTIONS
Heat oven to 375°. Grease a 9" x 13" baking dish with butter; set aside. Whisk flour, baking powder, and salt in a bowl. Whisk 1 cup sugar and the eggs together in a bowl until smooth. Stir in yogurt, oil, and vanilla. Add dry ingredients; whisk into a smooth batter. Pour batter into greased pan and smooth top with a rubber spatula; arrange plum halves, cut sides down, evenly over batter. Combine remaining sugar with cinnamon in a bowl; sprinkle over the top. Bake until plums are very tender and a toothpick inserted into middle of cake comes out clean, about 50 minutes. Let cool and slice into squares to serve.
