請客請客,色彩斑斕的敘利亞菜

上周末請了同教會的一對小夫妻來家裏晚餐,女生特別甜,男生很穩重,超可愛的一對。這次煮敘利亞菜。



Red Lentil Soup

暖暖的一鍋湯,暖心又暖胃。加上酸酸的紅酒醋,味道更豐富了。
Ingredients:
2 cups red lentils
1 onion, chopped 
2 leeks, white part only, chopped
3 cloves garlic, minced garlic 
1 tablespoon kosher salt
a few grinds of black pepper
1 teaspoon ground cumin
6 stalks celery, medium-diced 
4 carrots, medium-diced 
2 quarts vegetable stock
1/4 cup tomato paste
2 tablespoons red wine vinegar

Directions
In a large bowl, cover the lentils with boiling water and allow to sit for 15 minutes. Drain.

In a large stockpot on medium heat, saute the onions, leeks, and garlic with the salt, pepper, and cumin for 20 minutes, until the vegetables are translucent and very tender. Add the celery and carrots and saute for 10 more minutes. Add the vegetable stock, tomato paste, and lentils. Cover and bring to a boil. Reduce the heat and simmer uncovered for 1 hour, until the lentils are cooked through. Check the seasonings. Add the red wine vinegar and serve hot.

Baba Ghanoush 香烤茄泥
這是老公最喜歡的一道菜。

材料:大茄子兩顆,番茄兩顆去皮去籽切碎,紅蔥半顆切碎,大蒜兩顆切碎,核桃三大勺烤香碾碎,石榴四大勺,橄欖油兩大勺,檸檬一顆榨汁,鹽一小勺。
做法:茄子明火烤到表皮焦香,撕去烤焦的表皮,搗爛茄泥。拌入番茄,紅蔥,大蒜,再加入橄欖油和檸檬汁,鹽巴,充分攪拌。最後加入石榴和核桃顆粒。用大餅或者菜葉卷著吃。

Tabbouleh 歐芹小麥沙拉

2 bunches of flat italian parsley
1/2 bunch of mint
1 white onion
3 heirloom tomatoes
1/4cup of bulgur
2 large lemons
salt, black pepper
Bulgur加入檸檬汁和番茄汁,過十五分鍾再加入其餘食材,全部拌勻。



Beet And Clementine Salad 甜菜橘子沙拉

beet, clementine, cilantro, garlic, lemon juice,不能再簡單了。

Fattet Chicken 多層大盤雞
客人一直叫這道菜"nacho dish",把我笑的。味道很多層次很豐富,其實蠻容易做的,推薦!

烤雞一隻,去骨去皮,雞肉拆成條。
烤香pita
自製 yogurt sauce ( yogurt 一杯 + 4tbsp tahini + 2 garlic + lemon juice)
Toast almonds, pistachio, and pine nuts

To create the layers: Place the fried bread at the bottom of serving dish in 1 even layer. Top with cooked rice in another even layer. Top cooked rice with prepared garlic-yohgurt sauce, then top yoghurt with Chicken pieces, toasted nuts & sprinkle with finely chopped and parsley. Season with a sprinkle of freshly cracked black pepper.

Grilled Quail 烤鵪鶉


香辣惹味,我家女兒的最愛,客人也說是吃過最美味的鵪鶉。
quail marinated with 2 cloves garlic, 2 oz walnuts, lightly toasted and chopped, and juice of 1 lemon, 2 tsp aleppo pepper, 1 small bunch mint leaves, finely chopped, 1 small bunch fresh cilantro, finely chopped, 3 tbsp olive oil, sea salt and black pepper
400度烤30分鍾。

Samke Harra 辣烤魚

walnut + cilantro+ aleppo pepper + and tomato paste butter crusted salmon,400度烤15分鍾就剛剛好,好香好嫩。


番茄燒Okra


番茄四隻,Okra一磅,洋蔥一隻,加入all spice1小勺,全部入鍋大火煮五分鍾就好了。很清爽開胃的配菜。

要開動了喔!
