孝敬公婆的寮國菜

公公婆婆來這裏過節。在同齡的中國人中,他們在吃方麵真的是相當easy-going,什麽國家的菜都願意嚐試。這次笨笨媳婦做了一桌寮國菜,但事先賣個關子。每一樣都試過後,請他們猜是哪國菜。婆婆說,“很像泰國菜,但一定不是泰國菜。”公公說,“有點像越南菜,但又不太一樣。”這樣他們再把泰國越南周邊幾個國家聯想一下,很快就猜對了是寮國菜!真佩服他們!!



Hot and Sour Mushroom Soup

酸酸辣辣的,很像泰國的冬陰功湯。


Mince 1 shallots, add 1 stalk lemongrass, 2 whole thai green chili, 1/2 can yanang extract, fish sauce, mushroom. Boil for 15 minutes.
Dish out and add minced green onion and basil leaves.

Squid Salad 涼拌魷魚圈


Blanch squid, mix with 2 tbsp lime juice, 1 fresh thai chili, 2 tbsp fish sauce and 1 tbsp sugar, garnish with red pepper and cilantro.

涼拌筍子


筍子川燙過,跟小番茄,紅椒,香菜,小辣椒,蔥蒜,魚露,一點點糖,全部混合。

Laab Gai(minced chicken salad)

據說這是寮國的國菜,現在在大多數泰國餐館也有,蠻健康清新的一道菜。


1/4 cup uncooked sweet rice
2 pounds ground chicken ?
2 tablespoons peanut oil ?
4 cloves garlic, minced ?
2 tablespoons minced galangal
2 small red chile peppers, seeded and finely chopped ?
4 green onions, finely chopped ?
1/4 cup fish sauce ?
1 tablespoon shrimp paste ?
1 tablespoon white sugar ?
3 tablespoons chopped fresh mint
2 tablespoons chopped fresh basil
2 tablespoons chopped cilantro?
1/4 cup lime juice

Preheat an oven to 350 degrees F (175 degrees C). Spread the rice onto a baking sheet. Bake the rice in the preheated oven until golden, about 15 minutes. Remove and allow to cool. Once cooled, grind into a fine powder with a spice grinder.

Heat the peanut oil in a wok or large skillet over medium heat. Stir in the garlic, galangal, chile peppers, and green onions; cook and stir until the garlic softens, about 3 minutes. Add the ground chicken and cook, stirring constantly to break up lumps, until the meat is no longer pink, about 5 minutes. Season with fish sauce, shrimp paste, and sugar. Reduce heat to medium-low, and simmer until the excess liquid has evaporated, about 5 minutes more. Stir in the ground rice, mint, basil, and lime juice to serve.

Tam Mak Hoong (green papaya salad)
另一道寮國的傳統名菜。



Mix shredded green papaya, 2 clove garlic, 2 fresh thai chili, 3 snake beans, 8 cherry tomatoes, 1 lime, 1 tbsp fish sauce, 1 tsp shrimp paste, 2 tsp palm sugar

Lao-style Grilled Fish
寮國菜用很多新鮮的香料香菜,烤魚很香啊!


Season salmon with lemongrass, dill, kiffir lime leaves, scallion, ginger, and chili, salt.  Bake at 450 for 10 minutes.  Sprinkle with cilantro

Roast Duck Laotian Style
當晚的明星菜出場了!鴨子醃了一個晚上,味道很足。

耗油, soy sauce,salt,garlic, ginger, lemon grass, coriander stems, shallots, white pepper 400degree C 30 minutes

Lao Eggplant Dip (jeow mak keua)
寮國人吃飯喜歡擺很多醬類配菜。這款茄子醬就是最家常的一種。


4-8 Thai Bird Chilies shallots tomato?4-5 Cloves of Garlic?1/2 Cup Chopped Cilantro Leaves?1-2 Stalks Green Onion - Green parts only sliced thin?1/2 Tsp Salt?Fish Sauce
Roast Eggplant and mix with all ingredients.

甜點:糯米椰奶甜點
店裏買的。一字排開,五顏六色的真好看。

我已經在家裏做媽媽五年啦!這些菜都是我學著玩辦家家的,很享受整個過程!如果總是煮同樣的菜,沒什麽新意,我都沒什麽熱情了,但是一直學新菜,一邊學習這個國家的曆史文化風土人情,真的好有趣喔,越學越開心。
Mercury 回複 悄悄話 謝謝,我明天就去Wholefoods看看。 你的好本領學得真是快,好像一下子就弄出一桌筵席。記得你幾年前才從戰場上退下來,在家又有一套本事。 如果你的菜拿去私房小菜,肯定會有不少姐妹來學你做的好菜。
lepton 回複 悄悄話 其實我的竅門是去wholefoods 的bulk spice,每種挖兩勺子,放小小袋子,這樣不占地方啦。
