摩洛哥牛肉Beef with prune and honey
跟蘇姐姐學的,以前做過很多次,總是大受好評,這次還是老公最喜歡的一道菜。
2.5 LB beef cut into chunks
Mix beef with the following dry spices:1 tsp ground ginger,1 tsp ground cinnamon,1 tsp ground cayenne pepper,½ tsp ground allspice,¼ tsp ground cloves
2 tb olive oil,1 onion, chopped,4 cloves garlic, crushed
zest and juice from 2 lemons,2 tb honey
1 cup prune juice,salt and black pepper to taste
Heat a heavy-based clay casserole with oil, add onion and garlic until soft, add beef and cook until it is brown, add lemon zest, lemon juice, honey, prune juice, bring to a boil. Transfer to a 325F pre-heated oven and bake for 2 hours until the meat is tender.
摩洛哥無花果綠橄欖雞肉煲Chicken braised with dried fig and green olives
也是跟蘇姐姐學的,以前做過,很好吃。
材料:
帶皮帶骨的雞脯肉4片
洋蔥一個切碎,胡蘿卜兩個刨皮切大丁,
無花果幹14顆, 一切二,泡綠橄欖, 半瓶, 略拍扁, 泡汁留用,
thyme, 一小紮,Bay leaves, 4-5片,
雞湯一罐,橄欖油,鹽, 黑胡椒,
巴西裏,切碎,檸檬一個, 吃時擠汁用.
鍋燒熱加一點油, 放雞脯肉, 去掉油脂和邊上多餘的皮, 擦幹, 撒鹽和胡椒醃一會兒, 拍上一點麵粉, 進熱油鍋裏兩麵煎金黃, 取出, 把油也倒出不要, 同鍋裏加橄欖油, 燒熱, 加洋蔥炒香, 加胡蘿卜, 無花果幹, 綠橄欖, 炒熱, 倒入雞湯, 泡橄欖汁, bay leaves, thyme, 燒滾, 把雞脯肉埋放進來, 蓋蓋中小火燜燒20分鍾, 開蓋大火略收汁, 撒巴西裏, 培根, 擠檸檬汁, 上桌.

Ingredients 1/4 cup extra-virgin olive oil, plus more for garnish
1 large onion, medium diced
6 to 8 cloves garlic, pressed
1 teaspoon ground cinnamon
1 teaspoon ground cumin
1/8 teaspoon cayenne pepper
1 heaping teaspoon sweet paprika
1 (14.5-ounce) can chopped tomatoes
3 (15-ounce) cans chickpeas, drained and rinsed well
1 quart vegetable broth or reduced-sodium chicken broth
1 teaspoon sugar
Kosher salt
Freshly ground black pepper
1 (5-ounce) package pre-washed baby spinach
Directions: Heat olive oil in a large pot over medium-high heat. Add onion and garlic and saute until the onions begin to turn translucent; lower heat if browning starts to occur. Add spices and saute a minute or so. Add tomatoes, chickpeas, broth, and sugar. Season with a couple pinches of salt and 10 grinds fresh pepper. Stir well. Chickpeas should be just covered with liquid. If level is shy, add some water so the chickpeas are just covered. Bring to a simmer, then lower heat to low and gently simmer for 45 minutes. Remove soup from heat. Use a potato masher to mash up some of the chickpeas right in the pot. Stir in the spinach and let heat through until wilted, just a couple minutes. Season again, to taste, with salt and pepper.
番茄蜜糖雞 Chicken with Tomatoes and Honey
酸酸甜甜,小朋友的最愛!
Put chicken, 3 tablespoon of oil, 1 large onion, grated, 2 pounds tomatoes, peeled an chopped, salt and plenty of pepper, 1/2 tsp ground ginger, 2 tsp ground cinnamon, 1/2 tsp crushed saffron in a large pan. Cook gently, covered, turning the chicken occasionally for about 1 hr.
Remove chicken, and continue to cook the sauce over medium heat until reduced to a thick, sizzling cream. Stir as it begins to caramelize and be careful not to burn. Stir in the honey return the chicken pieces to the sauce and heat through. Sprinkle almonds and sesame seeds.
杏脯庫斯庫斯
材料: couscous 1 cup, 杏脯10個,切絲的杏仁 1/2 cup , 大蒜2瓣,蔥3支(取綠的部分), 香菜葉子一下把,檸檬汁3 TBSP, 一隻檸檬的皮屑, 橄欖油 1 TBSP
電飯褒裏放couscous和1 1/4 cup 水, 象燒飯一樣的燒就可以了. 好了以後5分鍾再開蓋,用叉子插鬆. 杏脯切碎. 杏仁烤香. 蔥,香菜切碎,大蒜壓泥 . 然後把以上所有材料和檸檬汁,檸檬皮屑混合.
Mussels Moroccan Style
這是當天另一道明星菜,大人小朋友搶著吃。友情提示,Mussel一定要當天買活的,口關上的那種。
Ingredients
1 pound (500 grams) of fresh mussels (with shell)
15 oz (425 grams) plain tomato sauce (in a can)
1 medium sized tomato - chopped
2 teaspoons ground paprika 1 teaspoon ground cumin 1/2 teaspoon salt 1/4 teaspoon pepper 5-6 garlic cloves (crushed) 2 tablespoons olive oil
1/2 cup of finely chopped parsley and cilantro (mixed)
1- In a large pot, add the olive oil and heat on medium-high heat. Add the plain tomato sauce, the chopped tomato, the crushed garlic, 1/4 cup of the mixed cilantro and parsley (we will keep the other half for later), and the spices (salt, pepper, cumin, and paprika).
2- Mix well. Cover the pot and cook the tomato sauce for 5 minutes.? When the tomato starts bubbling, add the mussels to the pot. Mix. ? Cover the pot and cook the mussels for around 10-15 minutes on medium high heat. You may need to add a little bit of water (if necessary).? Once the mussels are ready, add the rest of the chopped parsley and cilantro. Mix. ?
Eggplant Zaalouk
1 large eggplant, peeled and chopped
4 large tomatoes, peeled, seeded and chopped
3 cloves of garlic, finely chopped or pressed
1/3 cup chopped fresh cilantro and parsley, mixed
1 tablespoon paprika 1 tablespoon cumin 1 1/2 teaspoons salt 1/8 teaspoon cayenne pepper (optional) small wedge of lemon (optional)
茄子烤熟,全部材料拌勻就好了。
Warm Roasted Cauliflower Carrot Salad
4 medium carrots, peeled, trimmed and sliced
1 cauliflower
1 cup red onion, chopped?
2 garlic clove, peeled and crushed
1 tablespoon fresh ginger;?1/2 tsp. ground cumin 1/2 tsp. ground coriander 1/2 tsp. turmeric 1/4 tsp. ground cinnamon?1⁄4 tsp. paprika 2 tsp. salt? 3 pinches cayenne?1 tbsp. fresh lemon juice ?2 tbsp. chopped parsley 1/4 cup chopped cilantro
全部拌在一起,sprinkle with almonds?
Tomato and Cucumber with Farro Salad
Uncooked pearl farro, 1/2 cup
Cucumber (seeds removed, finely chopped), 1 cup
Red onion (minced), 1 tbsp
Mint (finely chopped), 1tsp ?
Sun-dried tomatoes (finely chopped), 2 tbsp ?
Roasted Bell pepper (finely chopped), 2 tbsp ?
Fresh lemon juice, 1 tsp?
Salt & pepper
DIRECTIONS
A. Cook Farro: Add about 1 1/3 cup salted water in a saucepan, and bring it to a boil. Reduce the heat and simmer the grain with a closed lid for 25-30 minutes until tender, drain and let cool;
B. Combine cooked farro with remaining ingredients and toss well
Yogurt with pomegranate and mint, sprinkle with toasted pistachio
