酸酸辣辣的緬甸菜

周末大學好友一家來訪。這次煮的是緬甸菜。

緬甸餐廳不多見,好幾年前在三藩市的"Burma Superstar"吃過一次緬甸菜,我和老公都超喜歡,味道酸酸辣辣的,大概匯集了中國菜和印度菜的混血,還蠻和我們的口味。

Chicken Curry (Kyet Thar Sipyan)緬式咖喱雞

緬甸咖喱不放椰奶呢。
Ingredients:
½ teaspoon ground turmeric;2 teaspoons curry powder;½ teaspoon salt;2 tablespoons fish sauce?
2 lb. chicken thighs (quartered)
2 medium onions;4 garlic cloves;1 tbsp ginger;1 teaspoon crushed dried chillies
1/2cup peanut oil?
½ teaspoon paprika;3 tomatoes (chopped);5 potatoes (chopped)?
400ml warm water 1 tablespoon fish sauce;1 stick of lemongrass (bruise)
Directions:
1. Mix the curry powder, turmeric, salt and fish sauce in a bowl. Add the chicken and toss in the marinade. Leave for 30 minutes while you make the onion paste.
2. Put the onion, garlic, ginger and dried chillies in a food processor. Mix to a coarse paste.
3. In a wok, heat the oil. Cook the onion paste over moderate heat for 15-20 minutes. It may seem like a lot of oil but it’s important not to skimp here. Keep a close eye and stir frequently. When the mixture has caramelized and turned reddish brown, add the paprika and stir until fragrant.
4.Add the chicken and turn up the heat stirring for another few minutes. Add the tomatoes and stir for a further 5 minutes. And 400ml of warm water, potatoes, 1 tbsp fish sauce and lemongrass, cover and simmer for 45-60 minutes, occasionally stirring the mixture until the meat is tender. It is ready when the gravy has reduced and the oil has returned.

Tamarind pork

當晚的明星!有點像中式的紅燒肉吧,酸酸甜甜的,小朋友特別喜歡。

ingredients:
50g tamarind pulp;250ml hot water
2 large onions, quartered;4 garlic cloves, crushed;3 whole dried chillies, soaked in hot water?
1/2cup peanut oil?
¼ teaspoon ground turmeric;1 tablespoon shrimp paste?
700g pork, cut into 3cm chunks
Directions:
Prepare the tamarind first. Add the hot water to the tamarind and soak for a few minutes. Use a fork to mash up the pulp and strain through a sieve to remove any fibres.
Pound the onions, garlic and dried chillies until they resemble a rough paste.
Heat the oil in a saucepan and cook the onion paste for 15-20 minutes. When it has caramelized and turned reddish brown, add the turmeric and shrimp paste. Break up the shrimp paste and stir through the mixture.
Add the pork and cook over a moderate heat until any liquid that has come out of the pork has evaporated. Keep stirring to avoid burning the onions. Pour in the tamarind liquid and bring to the boil. Reduce the heat, cover and simmer for 45-60 minutes. Check at regular intervals to make sure the gravy has not dried out. Season with a little salt if you wish.

Mohinga soup魚湯米線

這道菜是緬甸國菜,通常是早餐配米粉。我覺得還不錯,就是香草味道太重了點。

prepare the fish:
1 lb catfish fillet;1 lemon grass stalk, bruised;¼ teaspoon ground turmeric;500ml water
to make the onion paste:
1 large onion, chopped;3 cloves garlic;1cm fresh ginger;2 lemon grass stalks, white part only;3 whole dried chillies,soaked in hot water?
1 teaspoon shrimp paste;½ teaspoon paprika;½ teaspoon ground turmeric?
6 tablespoons peanut oil
to make the soup:
1.5 litres water;100g young banana stem, sliced;75g ground rice powder, roasted;3 tablespoons fish sauce;1 tsp ground black pepper
eat with:
500g fine rice noodles cooked;3 limes, halved;5 hard-boiled eggs, peeled & quartered;2 handfuls of fresh coriander, chopped;extra chili flakes

Put the fish in a large pan, add the water, lemon grass and turmeric. Bring to the boil and simmer for 6-10 minutes until the fish is just cooked. Remove the fish from the pan and when cool enough to handle, peel the skin and flake the flesh, discarding any bones. Drain the fish stock through a sieve and reserve for the soup.
Mix the onion, garlic, ginger, dried chillies and lemon grass into a paste.
Heat the oil in a saucepan and add the onion paste. Cook over moderate heat for 15-20 minutes until the paste is soft and caramelized. Add the shrimp paste, mash until incorporated, then mix in the turmeric and paprika. Cook for a further minute until the spices are fragrant before adding the flaked fish. Pop the lid on and cook for 10-15 minutes, allowing all the flavors from the onion paste to infuse into the fish.
To make the soup: put the soup paste, rice powder, water and the reserved fish stock in a large pan. Bring to a boil while stirring continuously to make sure the rice powder doesn’t clump. Add the banana stem and simmer for 20-30 minutes until they are tender. Add the fish sauce and black pepper.
To serve, put a handful of noodles in a bowl and ladle over the soup. Let everyone add the garnishes as they wish. It should taste spicy, salty and tangy from the limes.

Tea Leaf Salad茶葉沙拉

緬甸人不隻喝茶,也吃茶葉。茶葉沙拉是用醃過的茶葉,混合各種香香脆脆的花生芝麻豆豆,口感豐富。自從在“Burma Superstar"吃過一次就念念不忘,總算可以自己山寨一把了。
1 package fermented tea leaf
1 head romaine lettuce
1 tomato
1/4 cup toasted sesame seeds
1/3 cup fried garlic
1/3 cup sunflower seeds, unsalted
1/2 cup roasted peanuts, unsalted
1 lemon
1 jalapeno (finely chopped)
Chop the romaine lettuce and layer it on a serving platter. Remove the seeds and dice the tomatoes and pile them on top of the lettuce. Pile each of the remaining ingredients on the salad and spoon about half of the tea leaf mixture in the middle, reserving the other half for later. Just before serving, squeeze the lemon wedges over the salad, and toss everything together well, be sure to evenly distribute the tea leaves.

Tofu and eggplant salad豆腐茄子
很好吃!茄子比豆腐入味,軟軟糯糯的,和這些香料好配。

1 eggplant; firm tofu, cut into cubes or sticks;1 small chili, diced?small handful of coriander, chopped;½ lemon, juiced;2 garlic cloves, sliced;salt
Roast eggplant and tofu, jalapeño. Mix with lemon juice, coriander, garlic and salt.

Cucumber Salad

還蠻爽口的,隻能算中規中矩,沒有很出彩。
INGREDIENTS:?
2 cucumber, chopped coarsely;2 stalks of celery;1/2 teaspoon salt;1 tablespoons apple cider vinegar 3 cloves garlic (finely sliced);1 tablespoon sesame seeds;1/2 teaspoon turmeric powder
DIRECTIONS:?
Peel and core the cucumber and celery. Add the turmeric and salt. Drain, and add a couple of tablespoons of vinegar, garlic and sesame seeds.?

Sago Pearls in coconut water

椰奶西米露配番薯,又香又甜!
做法超簡單--按sago package上的指示,半杯西米入滾水煮大概十分鍾,加一罐椰奶,半杯糖,切丁的日本甜番薯,再燜大概二十分鍾就好了。我用燜燒鍋,特別方便。
