試做菲律賓菜

上周末請了牧師一家人來晚餐。牧師是菲律賓華僑,十歲移民來美國,連他自己都很久沒有吃到菲律賓菜了。他第一個反應就是照相而且馬上傳給在加州的媽媽看。

Sinigang (sour tamarind soup)
可以配很多不同的菜和肉。我選放蝦仁和大芥菜。小聲透露,我偷懶,用了一個tamarind soup spice pack。加上水,煮開放料就成了。

菲律賓式empanada
餡是碎牛肉,葡萄幹,青豆,番茄,辣椒,雞蛋。外殼用炸的。做的夠專業吧?因為是專業的啦!這是我在附近菲律賓小店買的。我老公很喜歡很喜歡!


Pancit Bihon (蝦仁炒米粉)

這個菜跟中式炒米粉差不多,隻是注意要買“Excellent"牌子的米粉,有一點cornstarch混合在米粉裏,口感跟一般的新竹米粉不太一樣。原方子用的是雞肉,我換成了豬肉。想偷懶的話,可以買超市已經切絲的蘿卜和切絲的包菜。很容易的一道菜,特別受小朋友喜歡。推薦一下!


Adobo Chicken(醋燒雞)

很牙米!就是醋的味道好重啊,掀蓋子的時候,酸味撲鼻而來,差點把我熏背氣。

3-4 LB雞肉, 腿肉為佳, (豬肉也行)
1 杯-白醋, (米醋也行)
1 杯- 醬油, 1個-洋蔥, 切碎,
4-5 粒- 大蒜, 切碎,
3-4 片- 月桂葉, bay leaves
1 大勺- 黑胡椒粒, 略搗碎,
紅糖, 隻加一小勺,稍微平衡一下酸度.

做法:
把所有的材料放一盆裏泡一小時以上, 把雞取出瀝幹, 放熱油鍋裏兩麵煎金黃, 我把皮和油都去掉了, 倒入醃料, 一起中火燜燒一小時, 雞塊取出裝盤, 大火收幹汁, 再倒在雞上. 配白米飯吃, 牙米!

Kare Kare(花生醬雜燉牛尾)
應該是我嚐試過最exotic的菜式了。第一次買香蕉心,味道苦苦的。這道菜材料很多,步驟蠻麻煩的,可是最後的味道太奇怪,家人不太能接受。

Adobong Kangkong(空心菜)
Ingredients
1 bunch water spinach (kangkong), leaves separated and stalks chopped in 1 inch length
1/4 cup soy sauce
1/8 cup vinegar
1 head garlic, crushed and chopped
1/4 cup water
2 tablespoons cooking oil
Salt and pepper to taste
跟普通炒空心菜也差不多,比較特別的是用醋和醬油調味,大概跟國菜Adobo差不多吧。放一點點辣椒提味。

Halo Halo
牧師說,Halo Halo就是混合的意思。
又打了懶主意,買到罐裝Halo Halo蜜汁雜豆。用我家超強馬力的美善品打碎冰,澆到刨冰上就成了。

Cassava Cake(木薯糕)
我們家都喜歡吃糯米的點心,木薯糕的味道跟糯米做的年糕味道,口感都好像。木薯真的很神奇--黑粗堅硬的外表,裏麵是硬邦邦的木頭一樣的材質,可是經過打碎和烘烤,居然變得如此香甜軟糯,不可思議!

Ingredients
Batter:
2 lbs fresh cassava, grated
1 can coconut milk
½ can evaporated milk
2 pieces raw egg
¼ cup butter, melted
6 tbsp cheese, grated
½ cup condensed milk
14 tbsp sugar
Topping:
1 can coconut milk
2 tbsp sugar
½ cup condensed milk
2 tbsp flour
2 tbsp cheese, grated
1 piece raw egg
Cooking Procedure
. Combine the grated cassava, butter, condensed milk, evaporated milk, cheese, sugar, and eggs in a mixing bowl and mix thoroughly
. Add the coconut milk in the mixing bowl where the mixed ingredients are. Mix again.
. Grease the baking tray then pour-in the batter (ingredients that has just been mixed)
. Pre -heat oven for 350 degrees Fahrenheit for 10 minutes then put-in the baking tray with batter and bake for 1 hour.Remove from the oven and set aside.
. Meanwhile prepare the batter by combining the sugar and flour and put-in the heated saucepan.
. Pour-in the condensed milk then mix thoroughly.
. Add the cheese while stirring constantly.
. Pour the coconut milk and stir constantly for 10 minutes
. Pour the topping over the Cassava Cake (baked batter) and spread evenly.
. Separate the yolk from the egg white of the remaining egg (we’ll be needing the egg white)
. Glaze the topping with the egg white (you may use a basting brush for this step)
. Broil the Cassava cake until color turns light brown.
. Garnish with grated cheese and serve. Share and enjoy!


吃飯的時候牧師告訴我們菲律賓正遭遇重大台風水災,當時我們都還毫不知情。目前災情嚴重,祈福菲律賓人民早日度過難關。
