to Oregonrain: how to cook steak

Hi, Oregonrain, I read your blog and like your cooking very much. My husband like steak a lot, but I am not very good at cooking it. When I fry it, there are always lots of water/juice come out of the meat, if I wait till everything is dry, the meat is no longer tender. Could you please give me a step by step instruction on how to cook steak, including what kind of meat to buy, what kind of pan to use. Thanks a lot.
