2013年最後一次請客--土耳其大餐

聖誕節快樂!上周五請了三家朋友來家裏歡聚一堂。這次煮的是土耳其菜。朋友們都很喜歡,連小朋友都非常捧場,真的好開心!

煮了很多菜。土耳其菜用的香料不多,大部分是取食材的本身的清甜味道,特別喜歡用茄子,甜椒,番茄,非常對我們的口味。

紅扁豆湯 Red lentil soup

這個湯真的超讚!非常非常美味,還超健康。豆子粉粉糯糯的,吸取了蔬菜的甜香,大冷天的來一碗特別暖胃溫心,好滿足!
Ingredients:
2 cups red lentils
1 onion, chopped 
2 leeks, white part only, chopped
3 cloves garlic, minced garlic 
1 tablespoon kosher salt
a few grinds of black pepper
1 tablespoon minced fresh thyme leaves
1 teaspoon ground cumin
6 stalks celery, medium-diced 
4 carrots, medium-diced 
2 quarts vegetable stock
1/4 cup tomato paste
2 tablespoons red wine vinegar

Directions
In a large bowl, cover the lentils with boiling water and allow to sit for 15 minutes. Drain.

In a large stockpot on medium heat, saute the onions, leeks, and garlic with the salt, pepper, thyme, and cumin for 20 minutes, until the vegetables are translucent and very tender. Add the celery and carrots and saute for 10 more minutes. Add the vegetable stock, tomato paste, and lentils. Cover and bring to a boil. Reduce the heat and simmer uncovered for 1 hour, until the lentils are cooked through. Check the seasonings. Add the red wine vinegar and serve hot.

友情提醒一下,我沒有把red wine vinegar加入湯裏,而是放在桌上,請朋友們自行取用。我自己覺得加了味道更豐富,但是不是每個人喜歡湯裏加醋。

烤茄泥Baba Ghanoush

很香很糯,微酸的味道,很合我們的胃口。
茄子一隻用火燒皮焦,把皮小心剝下來,裏麵的茄子用檸檬,芝麻醬,大蒜一起拌勻。


Cacik 酸奶黃瓜

這是一味經典的土耳其side dish,比起希臘的Tzatziki比較稀。拌著跟烤肉吃更是絕配。
1 clove of garlic, minced with salt
1 cup cucumber, diced
1 1/2 cup plain yogurt
1 cup water
Extra virgin olive oil
Fresh dill, chopped
Place the garlic, yogurt and water in a medium sized bowl. Mix with a wooden spoon until it is blended very well. Add diced cucumber and mix again. With a ladle pour into small bowls and then add 1 tbsp of olive oil on top of each. Garnish with fresh dill. 

Fasulye Piyazi (White Bean Salad) 白豆沙拉

很容易,一罐白豆,加小番茄,切碎的紅蔥,紅甜椒,黑橄欖,capers,現榨的檸檬汁,新鮮薄荷葉。味道清新。

Patlican Biber Kizartmasi (Roasted eggplant, Red peppers, red onion, tomato, garlic)  烤茄子甜椒

茄子和甜椒,紅蔥,都被烤的香香甜甜糯糯的,非常好吃!這個菜我家會經常做。
1 medium eggplant
2 red bell peppers, seeded
1 red onion, peeled
2 garlic cloves, minced
3 tablespoons good olive oil
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1 tablespoon tomato paste
Directions:
Preheat the oven to 400 degrees F.
Cut the eggplant, bell pepper, and onion into 1-inch cubes. Toss them in a large bowl with the garlic, olive oil, salt, and pepper. Spread them on a baking sheet. Roast for 45 minutes, until the vegetables are lightly browned and soft, tossing once during cooking.  Add tomato paste.

Roasted Cauliflower With Lemon Parsley Dressing 檸檬香芹烤花菜

cauliflower, 2 tbsp olive oil, 1/2 cup parsley, with 2 tbsp lemon juice, 1 tsp lemon zest, 2 garlic cloves, salt and pepper
Preheat oven to 425°F. Toss cauliflower and 4 tablespoons oil on a rimmed baking sheet; season with salt and pepper. Roast, tossing occasionally, until tender and golden brown, 25–30 minutes.
Meanwhile, pulse parsley, lemon juice, and remaining 2 tablespoons oil in a food processor until very finely chopped; season with salt and pepper. Toss cauliflower with lemon-parsley mixture and top with lemon zest.

Roasted Cauliflower and Kabocha Squash with cilantro and Pomegranate 烤花菜南瓜
同樣方法烤花菜和南瓜,拌上香菜和石榴。好看又好吃。

 
Spinach with pine nuts 鬆子炒菠菜

sautéed with shallots, pine nuts,  garlic.以後又有一種炒菠菜的好方子了!

 
Bulgur Pilaf  小麥米飯

這是土耳其媳婦Acme的家傳方子:洋蔥和長辣椒(long peppers) 切丁,放鍋裏,橄欖油炒斷生,加 tomato paste 一罐,注意不是 ketchup, 和洋蔥辣椒丁混均勻。這時候先加水,再加 bulgur (麥仁碎)。比例是水1.3 1 bulgur ,更保險的比例是像燜米飯的水和米的比例,總的目的就是像燜米飯一樣把米燜熟。燜飯的過程是,加了水和 bulgur 以後一定大力攪和均勻,不沾底。加鹽。之後就等這個混合粥狀物沸騰,一沸騰就關小火,蓋著蓋,文火等米飯慢慢收水變熟,就像燜飯一樣,一鍋 bulgar pilaf 就好了. 最後程序是,把一把 Parseley 的葉子摘下來,稍微切碎,混在 bulgar pilaf 裏。
最後一個關鍵貼士,這一切都做好以後,拿幹毛巾或者多層 paper towel 蓋在鍋上,然後鍋蓋壓在上麵,這樣多餘的水汽就會被吸走,這鍋幹飯就會蓬鬆。

小愛,我都照做了,還特別拿毛巾蓋上,可是我的飯沒有蓬鬆呢。大概是燜飯中途我發現快粘鍋了,又加了水,大概水加的太多了。不過還是很好吃!

Imam Fainted 牧師暈倒了(土版佛跳牆)
我一看這個菜名就覺得好好玩,一定要試一試。傳說一位Imam(伊斯蘭教的牧師)新娶了一位很會煮菜的太太,嫁妝就是上好的昂貴橄欖油。新婚太太給他煮了這道美味,不知道是因為菜太美味,還是見到用的橄欖油太多,Imam居然暈倒了。我覺得這個故事好可愛,是不是有點像中國的佛跳牆傳說?

這個菜真的好好吃,是當天客人們交相稱讚的一道。
  • 8 medium Japanese eggplants
  • 5 yellow onions
  • 5 ripe tomatoes, diced
  • 6 garlic cloves, sliced
  • 2 tsp. sugar
  • 3/4 cup extra-virgin olive oil
  • 2 tsp.salt
  • ½ tsp. black pepper
  • 8 long, thin strips of green pepper (hot or sweet)
  • more olive oil or light vegetable oil for frying
  1. First wash your eggplants, then cut of both ends. Using a vegetable peeler or sharp paring knife, cut alternating strips of skin from end to end to make a striped pattern on each eggplant.
  2. Using the tip of your knife, cut a slit lengthwise starting and ending about ½ inch or 1 cm from each end. Be careful not to cut the slit too long. To remove some of the bitterness, soak the eggplants in salted water for about 10 minutes.
  3. While the eggplants are soaking, peel and cut your onions in quarters then slice them. Separate the layers. Also wash and clean the insides of your peppers to remove the seeds. Cut each one in half then cut each half lengthwise so you have 8 pieces.
  4. Heat the ¾ cup olive oil in a large saucepan. Add the onions and garlic slices and fry them until they are softened and translucent. Add the diced tomato, salt, pepper and sugar. Stir togther and let it simmer for a few minutes over medium heat.
  5. While the onion and tomato mixture simmers, pour about ½ inch of olive oil in a large frying pan. Fry the whole eggplants on each side until they begin to soften. Drain the extra oil on paper towels and leave them cool.
  6. Arrange the eggplants side by side leaving some space between them in a large baking pan. Open each eggplant where you made the slit and stuff it generously with the onion mixture. Place a strip of pepper on top of each eggplant. Bake them in a 200°C /390° F oven for 20 to 30 minutes, or until the liquid is reduced.
  7. Remove them from the oven, then let them cool down to room temperature. Drizzle asmall amount of olive oil over the top, cover and refrigerate them. Serve them cold garnished with a little chopped parsley, if desired.
Sesame Seed Chicken (Susamli Tavuk) 土耳其芝麻雞

500 gr chicken wing drummettes
1/2 cup milk
3/4 cup sesame seeds
1/4 cup breadcrumbs
1/2 tsp cayenne pepper, ground
Salt
Pepper

Place the milk in a small bowl. Place sesame seeds, bread crumbs, crushed pepper, salt and pepper in another cup and mix. First soak the chicken drums in the milk, then cover them with the sesame seed mixture. Arrange them on the oven tray on top of parchment paper. Don't let them touch each other, otherwise they won't be crispy.

Preheat the oven 400 F (200 C) and cook for about 45 minutes until they take a golden color. Sesame Seed Chicken is a great party dish, especially in the summer, enjoy :)

SULTAN'S DELIGHT (龍顏大悅)
這個菜名字真的就叫蘇丹開懷,我忍不住給它翻譯成“龍顏大悅”。其實是煲羊肉配茄泥。一看這菜名,當然要認真的來好好做一次。果真是當晚的明星菜!超級霹靂大推薦!



 
1 lb stew lamb (preferably from leg)
1 onion, finely chopped
2 green pepper, finely chopped
2 tomatoes, petite diced
2 tbsp tomato paste
2-3 tbsp butter
salt and pepper
1/2 cup parsley, finely chopped
1-1 1/2 cup hot water
-Heat butter in a pot and saute the onions for a coupe of minutes. Then add the meat. When browned on all sides, add green pepper. Stir for a couple of minutes.
-Add tomato paste and stir for another couple of minutes.
-Add tomatoes and cook for 5 minutes.
-At this point add the hot water and let simmer until meat is tender, approximately an hour. Add more water if need be.
-Sprinkle with fresh parsley.

2 lb puréed roasted aubergine 
Squeeze of lemon juice
4 tbsp butter
3 tbsp plain white flour
1 ½ cups milk
½ cup hard mature cheese, grated (I used eski ka?ar)
Salt and freshly ground black pepper
-Heat butter in a pot. Add flour and stir constantly to make a roux on low heat.
-Warm the milk and add slowly. Whisk to make the mixture smooth. simmer for 4-5 minutes.
-Add eggplant puree and mix well.
-Add salt and black pepper, and cheese. Mix well. Simmer for another 2-3 minutes.

最後把煮好的羊肉澆在茄泥上,大功告成!不但龍顏大悅,在座的客人大小都吃得大悅。

ADANA KEBAB 烤牛肉、羊肉
1 lb ground lamb / ground beef
 1 onion, very finely chopped
sea salt and pepper
1 teaspoon aleppo pepper
1 tsp red pepper paste
1/2 tsp paprika
1 handful of parsley

燒烤雞肉串
1 lb chicken breast, cubed
1/2 cup plain yogurt
1/2 tsp cumin
1 tsp red pepper, powder
1/2 tsp cayenne pepper
1 garlic clove, smashed with salt
2 tbsp olive oil

吃的時候配Cacik,還有Sumac粉,用pita餅卷著吃。香啊!


給小朋友買的雞肉麵包和牛肉麵包。

這些是我在一家敘利亞人開的家庭小店買的。她家賣的pita餅也好好吃。

甜點是經典的Baklava蜜果酥

我也是在同一家店買的,現做的,不是那種死甜(萬幸),被一搶而空。

法國旅遊的片子前一陣剛整理出來,在我的博客,特來謝謝你的info. les carmes的片子我放得不多,但是那地方真是讓我充分感受到了普羅旺斯。14年夏天如果去意大利的tuscany, 或許我也要找一個類似的地方。
