炎夏的輕食小菜,多款五彩沙拉

炎炎夏日,正是吃沙拉的最佳季節。五彩繽紛的各式沙拉,做起來輕鬆,吃起來爽口。
為了健康,我把油和糖都減到很少,甚至完全不用,更清爽。

希臘沙拉 Greek Salad

這款經典沙拉是我家常做的。特別清爽。番茄,黃瓜,橄欖,feta,還有大蒜都是不可缺少的重要用料。

原方子是Dave Lieberman 的Greek Salad
和我們在希臘吃過的味道一樣呢,應該很正宗啊.

Ingredients
For the dressing:
• 2 tablespoons extra-virgin olive oil
• 2 tablespoons red wine vinegar
• 1 lemon, juiced
• 2 cloves garlic, smashed with the side of your chef's knife
• 1 teaspoon dried oregano
• 3 pinches salt
• 10 to 15 grinds black pepper

For the salad:
• 2 to 3 hearts romaine lettuce
• 1 English cucumber, peeled, cut in 1/2 lengthwise, then cut into 1/2-inch chunks
• 3 vine-ripened tomatoes (about 3/4-pound), cored and cut into 1/2-inch chunks
• 1/2 red onion, very thinly sliced
• 1/2 cup pitted kalamata olives, coarsely chopped
• 1/4 cup crumbled feta cheese

To make the dressing: Combine all the ingredients in a resealable container and shake vigorously. Refrigerate until ready to serve, and then bring to room temperature before tossing salad.
Assemble the salad: cut off any dark tips and the bitter white bottoms from the romaine leaves. Cut the lettuce into 1-inch strips and place in a bowl that is large enough to hold all the salad ingredients comfortably. Scatter cucumbers, tomatoes, red onion, olives, and feta over the top. You can prepare the salad up to a few hours in advance. Cover it with a moist paper towel and refrigerate until 30 minutes before serving.

Guacamole Salad

大力推薦這個沙拉。有小番茄的甜,黃椒的脆,黑豆的軟,鱷梨的糯,加上一點點辣,酸,正正好。真的很好吃喔。
這是 Ina Garten 的方子。

Ingredients
• 1 pint grape tomatoes, halved
• 1 yellow bell pepper, seeded and 1/2-inch diced
• 1 (15-ounce) can black beans, rinsed and drained
• 1/2 cup small diced red onion
• 2 tablespoons minced jalapeno peppers, seeded (2 peppers)
• 1/2 teaspoon freshly grated lime zest
• 1/4 cup freshly squeezed lime juice (2 limes)
• 1 teaspoon kosher salt
• 1/2 teaspoon freshly ground black pepper
• 1/2 teaspoon minced garlic
• 1/4 teaspoon ground cayenne pepper
• 2 ripe Hass avocados, seeded, peeled, and 1/2-inch diced

Directions
Place the tomatoes, yellow pepper, black beans, red onion, jalapeno peppers, and lime zest in a large bowl. Whisk together the lime juice, salt, black pepper, garlic, and cayenne pepper and pour over the vegetables. Toss well.
Just before you're ready to serve the salad, fold the avocados into the salad. Check the seasoning and serve at room temperature.

Corn Salad


還是 Ina Garten的好方子。這個玉米沙拉特別清甜爽口,尤其是加了新鮮的basil。一樣原料都不能少啊。不過不喜歡生洋蔥的可以省去或者減少些。

Ingredients
• 5 ears of corn, shucked
• 1/2 cup small-diced red onion (1 small onion)
• 3 tablespoons cider vinegar
• 1/2 teaspoon kosher salt
• 1/2 teaspoon freshly ground black pepper
• 1/2 cup julienned fresh basil leaves

Directions
In a large pot of boiling salted water, cook the corn for 3 minutes until the starchiness is just gone. Drain and immerse it in ice water to stop the cooking and to set the color. When the corn is cool, cut the kernels off the cob, cutting close to the cob.
Toss the kernels in a large bowl with the red onions, vinegar, salt, and pepper. Just before serving, toss in the fresh basil. Taste for seasonings and serve cold or at room temperature.

Carrot Salad

這個也很簡單.蘿卜用food processor刨絲,加新鮮檸檬汁,Dijon mustard,鹽和幹紅莓(dried cranberries),最好還加點slivered almonds。冰鎮一下。

Watermelon Feta Salad
甜甜的西瓜也是沙拉的好原料。


原方子是Ina Garten的,我稍稍改動了一點.
Ina Garten’s original recipe

這個沙拉醬是用
• 1/4 cup freshly squeezed orange juice
• 1/4 cup freshly squeezed lemon juice (2 lemons)
• 1/4 cup minced shallots (1 large)
• 1 teaspoon kosher salt
• 1/2 teaspoon freshly ground black pepper
最後把西瓜,feta, 和新鮮薄荷葉一起混和在菜葉裏,澆沙拉醬就好了。要馬上吃不然就葉子軟了。

Grape Feta Salad
同樣的,甜葡萄和feta的sharp口感完美平衡味道。

original recipe

5 tablespoons balsamic vinegar (the web version recipe used white wine vinegar)
5 tablespoons fresh orange juice
2 tablespoons extravirgin olive oil
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
8 cups gourmet salad greens
2 cups seedless red grapes,halved
1/2 cup (2 ounces) crumbled feta cheese

1. Combine first 6 ingredients in a small bowl;stir well with a whisk. Combine remaining ingredients in a large bowl. Drizzle dressing over salad;toss well.
我還加了一些核桃,嗯,很棒的組合。

Salmon Salad
別看這個菜其貌不揚啊,內在美可是很震撼呢。


還是用 Ina Garten’s recipe

Ingredients
• 2 pounds cooked salmon, chilled
• 1 cup small-diced celery (3 stalks)
• 1/2 cup small-diced red onion (1 small onion)
• 2 tablespoons minced fresh dill
• 2 tablespoons capers, drained
• 2 tablespoons raspberry vinegar
• 2 tablespoons good olive oil
• 1/2 teaspoon kosher salt
• 1/2 teaspoon freshly ground black pepper

Directions
Break the salmon into very large flakes, removing any skin and bones, and place the salmon in a bowl. Add the celery, red onion, dill, capers, raspberry vinegar, olive oil, salt, and pepper. Season, to taste. Mix well and serve cold or at room temperature.

Tuna Salad

Ina Garten’s recipe
超級霹靂大推薦!這個tuna salad是我家大小的最愛,大人孩子都搶著吃。特別謝謝小蝌蚪大師回答我的疑問。冰凍的tuna也可以不用全熟。

Ingredients
• Good olive oil
• 1 pound very fresh tuna steak, 1-inch thick
• Kosher salt and freshly ground black pepper
• 1 lime, zest grated
• 3 tablespoons freshly squeezed lime juice (2 limes)
• 1/2 teaspoon wasabi powder
• 1 teaspoon soy sauce
• 5 dashes hot sauce (recommended: Tabasco)
• 1 firm, ripe Hass avocado, medium-diced
• 1/4 red onion, chopped
• 1 tablespoon minced scallion, white and green parts
• 1 tablespoon toasted sesame seeds

Directions
Heat a charcoal grill with hot coals. Brush the grill with oil.
Brush both sides of the tuna with olive oil and sprinkle generously with salt and pepper. Cook the tuna over the hot coals for about 2 1/2 minutes on each side. Remove to a plate. The tuna should be seared on the outside and raw inside. Allow to cool and cut into cubes.
(If you don't want to heat a grill, you can sear the tuna in a dry saute pan over high heat. Heat the pan for 2 minutes, add the tuna steaks and cook for 1 1/2 to 2 minutes on each side until seared on the outside and still raw inside.)
For the dressing, whisk together the lime zest, lime juice, wasabi powder, soy sauce, hot sauce, 2 teaspoons kosher salt, and 1 teaspoon pepper in a small bowl. Toss the avocado in the dressing and then add the tuna, red onion, scallion, and sesame seeds.

Spinach Strawberry Salad

好看又好吃的沙拉來了。
Ingredients
2 bunches spinach, rinsed and torn into bite-size pieces
4 cups sliced strawberries
2 tablespoons vegetable oil
2 tablespoons white wine vinegar
2 tablespoons white sugar
1/4 teaspoon paprika
2 tablespoons sesame seeds

Directions
1. In a large bowl, toss together the spinach and strawberries.
2. In a medium bowl, whisk together the oil, vinegar, sugar, paprika, sesame seeds. Pour over the spinach and strawberries, and toss to coat.

Peach Spinach Salad

這個和上麵的差不多,換了用桃子,加一些紅椒和杏仁,也是很棒的組合。

Roasted Beet and Carrot Salad

這個沙拉是我好朋友介紹的,胡蘿卜和甜菜都是很健康的蔬菜,這樣烤的甜甜的,非常非常好吃。
原料:
1 pound beets, 切塊
1 pound carrots,切塊
3 tablespoons 橄欖油
1/4 teaspoon 糖
2 tablespoons white wine vinegar
1 teaspoon honey
1 medium shallot,切碎
1 大把綠葉菜

方子:
1. 烤箱500度,甜菜和蘿卜都用2湯匙的油和1/2茶匙鹽,1/4茶匙胡椒,糖混合,烤20到25分鍾。放涼。
2.充分混合剩下的1湯匙油,白酒醋,蜂蜜,紅蔥頭,1/4茶匙鹽,1/8茶匙胡椒。
3.把甜菜和蘿卜和綠葉菜加步驟2的沙拉醬混合。

Grapefruit Salad


Ingredients:
2 tablespoons red wine vinegar
2 tablespoons fresh lemon juice
1 teaspoon honey
Kosher sald and freshly ground black pepper
1 grapefruit
1 head romaine lettuce, torn into pieces
全部原料混合就好了。

Jicama Mango Salad

jicame就是我們小時候吃的涼薯。脆脆的,和芒果很配。兩種都刨絲,然後加青檸汁,香菜。

Shaved Carrot and Pear Salad with Curry Vinaigrette

原方子是Giada De Laurentiis的。我很喜歡這個味道,但是老公說咖喱味有點怪。
Ingredients
• 1 1/2 pound large carrots, trimmed and peeled (about 8 carrots)
• 2 firm pears (recommended: D'Anjou)
• 2 tablespoons chopped fresh parsley leaves
• 2 tablespoons white wine vinegar
• 1 tablespoon curry powder
• 2 teaspoons honey
• 1 teaspoon salt
• 1/2 teaspoon freshly ground black pepper
Directions
Using a vegetable peeler cut the carrots lengthwise into thin ribbons or slices. Quarter, core, and stem the pears. Using a knife, slice into very thin strips. Place the carrot and pear slices in a large bowl with the chopped parsley.
Combine the white wine, curry powder, honey, salt, and pepper and blend to combine. Pour the dressing over the carrots and pears. Toss to combine and serve immediately.

Roquefort Pear Salad

Ingredients
1 head leaf lettuce, torn into bite-size pieces
3 pears - peeled, cored and chopped
5 ounces Roquefort cheese, crumbled
1 avocado - peeled, pitted, and diced
1/2 cup thinly sliced green onions
1/4 cup white sugar
1/2 cup pecans
1/3 cup olive oil
3 tablespoons red wine vinegar
1 1/2 teaspoons white sugar
1 1/2 teaspoons prepared mustard
1 clove garlic, chopped
1/2 teaspoon salt
fresh ground black pepper to taste

Directions
1. In a skillet over medium heat, stir 1/4 cup of sugar together with the pecans. Continue stirring gently until sugar has melted and caramelized the pecans. Carefully transfer nuts onto waxed paper. Allow to cool, and break into pieces.
2. For the dressing, blend oil, vinegar, 1 1/2 teaspoons sugar, mustard, chopped garlic, salt, and pepper.
3. In a large serving bowl, layer lettuce, pears, blue cheese, avocado, and green onions. Pour dressing over salad, sprinkle with pecans, and serve.
藍奶酪的濃香,梨子的清甜,胡桃的酥脆,對比出葉子生菜的清脆和酪梨的滑潤,加上醬汁的微酸微甜,層次多元,口感豐厚,非常美味! 這個沙拉每次推出都備受歡迎喔。

再來個湯吧。
Salmon Mushroom Tofu Miso Soup

非常簡單,用兩湯勺miso和一點點烹大師,化開水裏,等水開了,下切塊的三文魚,嫩豆腐,還有小蘑菇。都是嫩嫩的原料,特別受孩子們歡迎!
