prawn cocktail

這是西餐廳常見的一款appetizer,其實有點象國內普通的白灼蝦,隻是蘸料區別很大,還有就是煮好的蝦一定要放入事先備好的冰水裏,這樣可以保持蝦肉的脆度。



Prawn Cocktail
 Ingredients
Cooked prawns, heads, tails and shells removed
or ready shelled King or Tiger prawns
Iceberg Lettuce, shredded
2-3 spring onions, sliced thin
1/4 cucumber, peeled and cut into small cubes
olive oil, vinegar, salt and pepper for salad dressing
1 cup of low fat mayonnaise
1 tbsp tomato ketchup
dash Worcestershire sauce
a pinch of Paprika
pinch of salt and freshly ground pepper to taste
lemon juice to taste

Method

  1. mix the lettuce, cucumber and spring onions
  2. add the dressing
  3. place mixed lettuce in bottom of cocktail glass
  4. place the prawns on top
  5. mix the mayonnaise, ketchup, Worcester sauce and paprika with the lemon juice together
  6. pour over the prawns  and serve
