The top pick in the Chardonay variety goes to Antiguas Reservas Chardonay 2003 from the Cousino-Macul winery. This estate bottled chardonay has been fermanted in small oak barrels. The contact and evolution with the fine oak give it great character, complexity and equilibrium. It offers a clear balance between the specific aroma of this variety and that of oak. To the mouth it's dry but delicate, well balanced, round with good persistency. Its exquisite delicacy and quality of perfum, excellent fermantation and ageing process make it perfect to be enjoyed with seafood. I recommend these dishes: centolla, erizos with green sause, lobster, fresh oster, grilled salmon, or trout prepared with fine herbs.
