茄子肉餅,茄夾子,糖酥餅,葫蘆麵包

還記得我的月餅的人都知道我下廚的鳥菜水平,這倒使我沒了顧慮,鬥膽到私房上菜。

絞盡腦汁想做菜主要是菜園豐收,西紅柿做了西紅柿醬,冷凍西紅柿。茄子涼了幹菜,冰箱還是裝不下。燒茄子再好,吃了近兩個療程後也沒了熱情。我改做一下,效果還行。

茄子肉餅

材料:茄子,青椒,豬肉
調料:醬油,蔥,蒜,料酒

做法:
1)茄子切去老根後,切成滾塊;

2)豬肉用料酒,鹽拌好,起油鍋,把豬肉翻炒熟

3)鍋裏熱油,將茄子倒入,翻炒均勻,改小火,用鏟子出擠壓茄子中水分。10分鍾後,倒入蔥蒜,翻炒後盛入盤中。晾涼。

4)用發麵做成小份,擀成小餅,放入燒好的茄子,加少許cheese,封口。

5)在鍋中用中小火烙熟。

發麵餅吃起來會更忪軟一些。

茄夾子

做法:

1)將胡蘿卜,蔥,韭菜,豬肉餡,醬油,料酒,油,薑,花椒粉 拌好肉餡;

2)茄子切去老根後,切成半寸厚的片,中間切開,放入肉餡;

3)放入麵粉和雞蛋,水調好的麵糊糊裏,沾均勻

4)鍋裏熱油,將沾好麵糊的茄夾子放入鍋中,用中小火烙熟。

糖酥餅

材料:麵粉,白糖,油,Yeast

兩碗麵加半茶勺發粉,用溫水和成稍軟的麵團,分成幾個麵劑子,擀開加一大勺糖粉(糖和麵粉混合),像包包子似的包好,捏緊,擀成小餅狀就可烙了.

做法:

1)用溫水和成稍軟的麵團,加少許油。

2)將和好半發的麵擀成大餅,撒上一層麵粉。再切成小塊,裏麵包入一半糖,一半麵粉的糖麵。

3)鍋裏熱油,將包好的小餅用中小火烙熟。

葫蘆麵包 (Zucchini Bread)

最早看到這個食譜是一個朋友1996年送的email,現原封不動照抄。

3 eggs (sligtly beaten)

1 cup oil

2 cups suger (我用1.5 cups,不然太甜)

2 1/2 cups grated zucchini squash (or chop fine) 

2 teaspoons vanilla

2 cups flour

2 teaspoons baking soda

1 teaspoon salt

1/4 teaspoon baking powder

1 cup chopped walnuts

1 cup raisins 

Add all of the above ingredients in the order given.  Bake at 375 F about 1 hour.  Make 2 loaves.
