Cinnamon Pecan Biscotti,Chocolate Meringue Cookies

聖誕節做cookies啦!

聖誕節即將來臨,開始做些cookies,很喜歡http://allrecipes.com/這個網站,裏麵的菜譜,點心譜都有review,可以從中得到很多的信息,所以常常去逛逛,自從十二月份起,每天都有特色聖誕cookies recipe. 選了兩個,試試看。

第一個,因為材料的關係,自己稍加了改動,效果還是不錯,叫做 Cinnamon Pecan Biscotti.

Ingredients:
3/4 cup butter
1 cup white sugar
2 eggs
1 1/2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon ground cinnamon
3/4 teaspoon baking powder
1/2 teaspoon salt
1 cup hazelnut
Directions:
  1. Preheat oven to 350 degrees F(175 degrees C). Grease a cookie sheet or line with parchment paper.
  2. Ina medium bowl, cream together butter and sugar until light and fluffy.Beat in eggs and vanilla. Sift together the flour, cinnamon, bakingpowder, and salt; mix into the egg mixture. Stir in the hazelnuts.Shape dough into two equal logs approximately 12 inches long. Placelogs on baking sheet, and flatten out to about 1/2 inch thickness.
  3. Bakefor about 30 minutes in preheated oven, or until edges are golden andthe center is firm. Remove from oven to cool on the pans. When loavesare cool enough to handle, use a serrated knife to slice the loavesdiagonally into 1/2 inch thick slices. Return the slices to the bakingsheet.
  4. Bake for an additional 10 minutes, turning over once. Cool completely, and store in an airtight container at room temperature.
隻是手頭沒有Hazulnut,所以換成Pecan, 味道照樣好,喜歡喝咖啡的朋友可以試試看。

第二個,中文不隻該怎麽說,是隻用蛋白,沒有油的,名字叫Chocolate Meringue Cookies,兩個小朋友喜歡,兩個大人都不喜歡,好像有太甜。


Ingredients:
3 egg whites
1/8 teaspoon cream of tartar
1/2 teaspoon vanilla extract
2/3 cup white sugar
1 tablespoon unsweetened cocoa powder
1/3 cup semisweet chocolate chips
Directions:
  1. Preheat oven to 300 degrees F (150 degrees C).
  2. Combineegg whites, cream of tartar, and vanilla. Beat until the whites formsoft peaks. Slowly add sugar; beat until stiff peaks form, and mixturebecomes glossy. Fold in cocoa and chocolate chips.
  3. Drop mixture by teaspoonfuls on to a greased cookie sheet. Bake for 25 to 30 minutes.
