Normally The US Consulate only keep the non-immigrant visa application documents for a few years and then, remove them from their system. Also, USCIS normally do not check the non-immigrant visa applicaiton documents unless they doubt there was a visa fraud. So, your mother may just provide the correct information for the green card application.
