You may not need to get the H1 status and just use EAD to work. At the same time, ask your new employer to file EB2 PERM/I-140 for you. Then after your EB2 I-140 approved, you may just do the I-485 transfer/inter filing from the Eb3 I-140 to your Eb2 I-140 using the Eb3 PD as the EB2 PD so that you do not need to file a new I-485.
