【業餘廚子】芝麻發麵大餅

芝麻大餅非常鬆軟,香氣撲鼻,我非常愛吃。

Ingredients:

3 cups all purpose flour,

1 &1/4 cup warm water,

2tsp yeast,

1tsp salt.

Steps:

1. add all ingredients into the Kitchenaid bowl, mix at speed 2 for 10 minutes. 和麵機裏開2檔,10分鍾左右就可以了。

2. Cover the bowl, and let the dough rest for 15 minutes.  取出揉成均勻的長條,包保鮮膜醒15分鍾。

3. Roll the drought into a rectangular shape, brush with oil, evenly spread salt, sesames or green onion on to the dough.  醒完後把長條按扁,擀成長方形……  

4. Fold the dough per picture below. 看圖吧!

5. Wet the top side of the folded dough to with water, spread more sesame seeds and press the sesame seeds into the dough. Use your palm to press the dough to into the size that fits your pan. 最後抹水後才能撒芝麻,撒完用擀麵杖把芝麻壓入麵裏。這一步很重要,要不大餅煎完了,芝麻全部都掉了。

6. Oil the frying pan. Transfer the dough into the pan. Put the lid on and let the dough rise for an hour. 放鍋裏蓋蓋發酵。著急的話可以放100F度的烤箱半個小時左右即可。不放烤箱發酵時間長,要看各家的溫度了。

7. Turn the heat on at medium low for 5 minutes, flip the dough and cook at low heat for another 5 minutes.  

8 cut into small pieces and it is ready to eat.

做大餅不需要發兩倍大後再煎,我一般看看餅中間有點蓬鬆長高了就可以了,煎的時候還會發大的。

蓋蓋中小火煎,先煎沒有芝麻的那麵,煎5到6分鍾,打開看看,底部金黃了就可以翻麵了。轉小火煎有芝麻的那麵,火一定要小,要不很快就糊了。
