菠蘿在閩南,台灣方言叫旺來,新年做這蛋糕很受歡迎。最好是用新鮮菠蘿做,實在沒有可以用菠蘿罐頭做。新鮮菠蘿選用成熟有香味。如果買來的菠蘿還不夠成熟,可以放在有陽光的窗台放幾天便會變黃並產生應有的香味。不要買完全是綠色的菠蘿,這樣的菠蘿不會變熟。
很多版本會加櫻桃蜜餞,除了視覺效果,味道和菠蘿不搭。加些椰絲或杏仁粉倒是不錯的選擇。用量可以從麵粉中扣除。下麵是基本版。

butter (for greasing)
2 tablespoons sugar
6 slices fresh/canned pineapple in juice (plus 3 tablespoons of rum)
? cup all-purpose flour
1 teaspoon baking powder
¼ teaspoon baking soda
1 stick soft butter
½ cup superfine sugar
2 large eggs
Preheat the oven to 200°C/180°C Fan/gas mark 6/400ºF.
Bake for 30 minutes, then ease a spatula around the edge of the tin, place a plate on top and
turn it upside-down.
