魚香魚片— -BASA 魚切片用鹽,酒,蛋清, 澱粉醃20分鍾, -取一碗放酒,醋,糖,醬油,麻油,澱粉, 少量高湯, 留用, -黃瓜切片,留用. -油鍋炒香蔥,薑,蒜,辣椒末, 辣豆瓣醬, 炒出紅油, 下魚片, 輕輕推動, 魚片變白色後,加黃瓜,再輕翻幾下, 加配好的調料, 拌幾下, 芡綢了, 撒上蒜苗, 上菜.

臘肉炒秋葵—油鍋炒祘末,辣椒末,(1 habanero pepper) 臘肉片, 加紅椒, 黑木耳, 炒幾下, 加秋葵, 炒出絲後,加醬油膏, 蒜苗,翻幾下, 好了.

豆腐蒸蛋—一合嫩豆腐切小方塊,用放了鹽的開水 (有個燒開水器,隨時有開水) 泡一下瀝幹放大碗裏, 撒一些切碎的榨菜, 蝦皮, 胡椒, 4個蛋打散, 加1 罐雞湯(我在COSTCO買很多罐頭雞湯, 很方便, 做菜都用它代水用), 倒入碗裏, 放4片有肥的臘肉, 用保鮮膜包好碗口,進蒸鍋,中火蒸40分鍾.
