這道蒸冬瓜卷與水晶冬瓜卷做起來的分別,隻在於蒸的時間與切的材料有些不同,雖然費多一層功夫,但勝在營養豐富,味道鮮美,更顯高貴優雅,最適合宴客之用.
材料:冬瓜,香菇,火腿,蝦仁、高湯.
製做:香菇用熱水泡開,再切成片備用.火腿切用薄片備用.冬瓜切成長方形的塊,過沸水裏燙軟備用.蝦仁垛成茸放鹽,糖,味精,生粉壓成餅大火隔水蒸15分鍾拿出切片備用.將一塊香菇片,蝦餅片,火腿片,全放在冬瓜片上,卷起來擺在盤子上,當全部卷好後,放入滾水鍋裏隔水蒸15分鍾至冬瓜軟透即可熄火出菜(如做水晶冬瓜卷放冬瓜卷滾水鍋裏隔水蒸大約三分鍾即可). 沾汁:將高湯放鹽,糖,味精,用生粉勾芡後放幾滴麻油在上即成.
