扳麵在家鄉可說是人人喜愛的麵食.. 來印度後好久沒有嚐到那個味道了.. 原因主要是買不到適合的蔬菜.. 扳麵一般要樹仔菜, 莧菜, 或菜心煮出來的比較好吃.. 而印度很少有綠葉蔬菜.. 跟印度人的飲食習慣有關..
為什麽突然會想要吃扳麵呢??
事情是這樣的..
好友跟著老公 "移民" Pune, 把家裏種著的一盆菜心(馬來西亞帶來的種子) 全部一並連根拔起.. 送了給我.. 特別喜歡吃菜心的我高興得不得了.. 隻可惜很多還是幼苗... 這樣就要被消滅掉了..
扳麵一般也有壓麵機壓成的.. 我覺得手拉的比較有韌性, 吃的時候比較有咬勁...

開始煮扳麵羅..
先煮高湯.. 最簡單的做法..
湯鍋裏加少少油.. 加入近十隻江魚仔.. 炒香...

加入幹淨食水..煲...半個小時左右..

然後準備其他材料..
香菇幾朵, 木耳絲一把..浸軟, 木耳絲用燒水燙一下, 去澀..
精肉一小塊, 剁碎..

麵粉.. 我用攪拌機和麵.. 原因是.. 指甲太長.. 和麵很麻煩..

攪拌機內倒入少許的橄欖油..

吃到一半.. 盈盈喜歡加入東炎醬.. 這是為什麽剛剛鹽不加足的原因之一.. 另外一個原因是沾醬也已經帶鹹味了..
基本上盈盈的弟弟不耐煩一半一半的吃.. 通常都是一碗清湯, 一碗東炎的吃法.. 我吃不了兩碗..所以發明了半碗的吃法.. 嗬嗬..
