魚洗幹淨,撒上鹽,過夜。燒之前,用水衝洗一下,以去除多餘的鹽。鍋裏加
油,燒熱,將魚兩麵煎黃,放一邊。將切細的蔥,蒜頭,辣椒放入鍋裏的剩油中,加少量鹽,翻炒到出香味。加少量水,將煎好的魚放入,與蔥,蒜頭,辣椒一起煮,中間翻動幾次,以便魚肉入味。水幹即成。
