Some experience from years ago, but should still be valid: there are about 10+ types (classes) of trains. As a foreign tourist, you are advised to stay in aircond (about 3 classes in that range) or non-aircond first class. We once tried to get on a lower class train but was turned back to the aircond. In general there should be no problem to buy aircond tickets. And it is possible to pay (extra, etc) onboard. Please check local India Embassy/Consulate to get a free copy of India Rail Guide.
