Which software should be downloaded for writing Chinese e-mail?

I have downloaded NJ Star, but when i wrote Chinese e-mail by using NJ Star, the receivers saw a mess.

Could you please advice me which software should be downloaded for a correct transmission via e-mails, and the web address to download? Thank you so much.
