I got a Proven & VERY good roastBeef w/ mustard recipe. See:
Preparation:
1. buy small roast meat (~ 2 lbs) and wash and drain it well, and place it over a piece of food plastic wrapper
2. rub meat surface with 1/4 teaspoon salt + 1/4 teaspoon black pepper powder + 1/2 teaspoon sugar
3. coat thin layer mustard (1 and 1/2 tablespoon) over the meat surface
4. let the meat sit in the fridge for 6 hours or overnight
Cooking:
5. take out the meat and let it sit at room temperature for 30 min
6. cut some veg (flexible and any of carrot, celery, potato, beet ...) and put them under the meat (remove the plastic wrapper) in a bakeable glass container
6. preheat oven to 425F and roast for 20 min
Note: this is to seal the meat so the juice stays inside, not dry up
7. drop oven temperature to 325F and continue to cook for
- Beef (under 2 lbs) 30-40 min
- Pork (under 2 lbs) 50-60 min
8. take out the container and let it sit at room temperature for 15 minutes
