the contract you signed is in writing and your phone calls are verbal. So do write him a letter or send him an e-mail. You should describe the whole situation and notify him that if he couldn't start the contract in a week from today, you have to cancel the contract and go find some other contract.

Otherwise, he may send a bill to you ask you to pay the restocking fee of the material and maybe delivery charge etc.
