Did they know that you already filed 485 before they extended your I-20? If not, you better tell them because they may not let you extend it had they known it.

I wouldn't worry about getting sued. Once you start using your EAD, then you have to use EAD anytime you want to work and get paid from then on, because you can no longer be paid as F1.
