You can write

1): what is your furtue plan for your career?

2): Did you apply for any grants or write any proposals as PI or co-PI or as one of key members? If so, explain and attach them to your letter in response to RFE?

3): Have you recently send any emails to any professors in your area to look for similar new positions? Or any new offers from the professor in your current or similar area? if so, attache them
to your letter to RFE. These are clear evidence to show that you intends to continue work in the area that is claimed to be in the national interest.

4) You may think about other similar evidence, such as any communication between you and other persons to talk about your future plan via email, etc.
