You may keep your Priority date only if you change employer...

Basically,  PERM and I-140 are employer/job related. If you change employer, the new employer has to file PERM/I-140 again in most cases, but may keep the previous PD. You cannot quit your current job to wait for grren card either (unless green card has been approved and just waiting for it to be mailed to you).
