One risk is that your I-485 pending is less than 180 days, and if USCIS make a decision or send you RFE before your I-485 pending > 180 days and you has changed your job at that time, your I-485 may be denied. If your I-485 pending > 180 days or USCIS does not make a decision/RFE before your I-485 pending> 180 days, your job change is safe to your I-485.
