My parents applied visa themselves and they just left that box open in DS156 since they were already retired.
If 中信銀行非讓在現在的工作的單位裏填上以前的工作單位， 不然就不收這個表, you probably have no choice unless your parents choose to apply visa themsevles.
However, I don't think it really matters if they put their previous employer information in the form.
