The only document you need from your employer for I-485 filing is the Employment Letter. I think that you can DIY I-485 if the following conditions are met:
1) You have get your attorney’s permission; 2) You can get the Employment Letter from your employer; 3) You have one copy of your I-140 Approval Notice (I-797).
