I completely understand what you mean. I asked a friend who's working in law firm and specilize in EAD applciation, he said he didn't hear that examination officer will reject your GC applicaiton because there's a gap between two EAD Cards, even you work during that gap because normally they don't check that, what you do is just to apply for extension asap. Even in local district office which requires interview, many persons just go there with their expired EAD, they still get their GC. However, theoretically speaking, since you don't know how long you need to wait for your GC, you need get EAD extended.
