Well, you can. BUT, once you use EAD thus loose your H1B, your spouse loose his/her H4, thus need to leave the country, unless he/she also apply for 485, based on your 140 (has to be EB-1 now). Then when you apply for the new H1B, send the corresponding H4.

Or if possible, she can go back to china, when you use your EAD to work, and when you apply H1B, also have her H4, and then she can apply for a H4 visa in China.
