use H visa to re-enter

INS knows when you leave the country because you turn in I-94 card. If AP approval is after your departure date, you can't use AP. However, your 485 case will not be affected if you have valid H or L visa. These are the exceptions to AP rules. So if you have H status, you can go back to China, apply for a new visa (if you still have a second entry, there's no need) and enter with H visa.
