if I understand correctly, only I-485 application pending could extend your stay here legally, not I-130, nor J-1 waiver application?

but if you get denial of the I-485 due to J-1 waiver not in time, then you have to go back to China for 2-years, does this affect your future immigration visa application at Guangzhou?
