Usually the officer will think the situation right now,

not in future,even when you file a motion to reopen ,or
an appeal,if you still don't have a job in same field, you will lose.
If you want to win in appeal,you have to reasonable excuse,if you don't have one,it will fail,then your illegal status period will be counted since first denial,you may apply by the bar of 3-10 years.So you
shouldn't rely the future offer or a MTR/appeal,try to
come back to your NIW field ASAP.
