American's don't have two MCs,

Still confused. Haven't seen anyone having two MCs and just one copy of notarized MC from China. At least Notary in China could provide you three copies if want to buy it.
It does not matter, AS LONG AS the MC proves: you were married in China (notarized & translated as well). USCIS would not be fussy about it.
