If in AOS, you are still legal after losing H1, and can work using EAD and travel using AP.
But,
What is your basis for I-485? If based on unapproved I-140 filed by the current employer, you should seriously only use AOS as last resort and keep a non-immigrant status. If other basis, your I-485 should be quite safe. With I-485 pending, You can always regain H1 status by reentering with H1 visa if new employer sponsors.
