If your new job is a "similar job" like your current one, then you can use the AC-21:
1) your I-140 has been approved.
2) I-485 has been pending for more than 180 days.
After you join the new employer, send an "AC-21" letter to the USCIS. After this, even your previous employer send letter to invoke your I-140, the USCIS can not deny your I-485 due to this I-140 invoke.
To be safe, you can discuss the AR-21 solution with the lawyer of your new employer.
Generally speaking, if the two jobs are "similar", you are pretty safe.
