跟風閩姑-巧克力蛋糕(可能是低碳低糖的甜點)

方子來源是個法國人,紐約名廚,Jean-Georges Vongerichten
他的書: Home Cooking with Jean-Georges
 
這個方子的用料是半條黃油,半杯糖,3隻雞蛋,半杯杏仁粉,3.2盎司的巧克力,還有,隻需要一茶匙的麵粉。
這麽點原料能整出個蛋糕來。
 
若是用xylitol代替糖的話,還可以算是一個低碳低糖的甜點。
主要是非常的香,巧克力的濃鬱加上杏仁的香,又簡單易做。這是適合大人吃的比較sophisticated的巧克力蛋糕,沒有icing的,最後是在上麵撒一層可可粉。
 
材料:
4 tablespoons (1/2 stick) unsalted butter, plus more for pan
1 tablespoon all-purpose flour, plus more for pan (我覺得這一茶匙的麵粉不要省,裏麵的麵筋幫助蛋糕組織)
3 large eggs, separated
3 1/2 ounces bittersweet chocolate (66% cacao) (我用超市買的Guittard 牌子或者Ghirardelli Chocolate Baking Chips, 60% Cacao Bittersweet Chocolate,bittersweet的比semisweet的含糖量低一些)
1/2 cup sugar (這個可以用xylitol代替,1:1 對換)
1/2 cup almond flour
Dutch-process cocoa powder, for dusting (optional)
 
DIRECTIONS:
STEP 1
Preheat oven to 350 degrees. Butter and flour an 8-inch round fluted tart pan with a removable bottom or a springform pan, tapping out excess.(或者在底部放一張圓形的parchment paper,便於脫模,模具邊上一定要塗油撲粉防粘)
STEP 2
In the bowl of an electric mixer fitted with the whisk attachment, whisk together egg whites and about 1/2 of the sugar until medium-stiff peaks form. (打蛋白霜,加1/4 tsp或1/2 tsp白醋,先打一會兒,然後慢慢把糖一點點邊打邊加入)
STEP 3
Meanwhile, melt chocolate and butter in a large heatproof bowl set over (but not touching) simmering water, stirring occasionally until smooth. Remove from heat. 
STEP 4
Add 1 yolk to chocolate mixture and beat to combine. Add remaining yolks and mix to combine. Add the rest of sugar, almond flour, and all-purpose flour; mix until combined. Add 1/3 of the egg white mixture and mix to loosen chocolate mixture. Gently fold in remaining egg white mixture. (最後這一步,把蛋白霜和巧克力蛋黃糊混合時要有點技巧:先把1/3蛋白霜混進去,這時不要怕消泡,要拌勻,巧克力蛋黃糊稀一點了,然後接下來的蛋白霜混進去時,要快速從底下拌,這時要注意避免消泡,不要過度攪拌。和做戚風蛋糕一樣的技術)。
STEP 5
Transfer to prepared cake pan and evenly spread. Transfer cake pan to oven and bake until puffed and knife inserted into the center comes out clean, about 17 minutes (看自己的烤箱可能需要稍微調整). Transfer pan to a wire rack and let cool 10 minutes. Invert cake onto wire rack. Carefully re-invert and let cool completely. Dust with cocoa powder, if desired.
