很久沒寫帖上菜了,今上傳幾個家吃小菜與眾分享

薰魚

上海所謂的熏魚並非為煙薰之魚,而采用油炸的方式,我用的是貓魚切排,先入醬油醃製風幹,再油炸入料汁浸泡即成,口感鮮甜。《貓魚去腥法;整魚洗淨,入開水中燙幾秒鍾取出,用鋼絲球抹去魚體粘液至魚表發白即可。》

薰雞腿;

懶人山寨版,先將花椒鹽醃製雞腿,24小時後洗淨,可蒸可煮,我是用煮的方式,煮泡30分種,取出吹幹,蒸鍋底加錫紙上放白糖、麵粉、八角……上架雞腿,蓋蓋,薰15分種即可

跳舞的四季豆:

此菜很簡單,在做好的四季豆上撒上柴魚幹,即速上桌,由於柴魚受熱、潮會慢慢扭曲收縮,如同在四季豆上跳舞,很受歡迎
