After setting the Chinese as Default, same place find the "input" setting.
I am using win2000:
Start -> Settings -> control panel -> Regional Options -> Input Locales -> "Input languages and Methods" click Change
Pop up "text services" windows, under "Installed Service" left click Add -> Choose Chinese QuanPin -> ok -> Add again -> choose MS Pinyin -> ok -> return to
"text service" window
Below click on "Language bar" -> check "Show the language bar on the desktop" -> ok -> back to "text service" window
click on "key settings" next "Language bar", choose or remember what key or key combination you need to switch from English and Chinese input. everything done -> ok -> ok
Open notepad or word, use the the switch key/keys to switch to Chinese input and then type.
