Apologize. Tell her that you always respect her, didn't mean to

Give yourself an excuse.
Tell her you are too concentrated on the project, working day in and out.
Get her sympathy.

If she doesn't accept your apology, convince her that everybody makes mistakes, everybody deserves a second chance, and you want to make it up for her
