The saved email from your manager will be kay evidence. Make it very clear in the interview, you were forced to quit and you had no choice but to quit. Shows the email and any other conversations especially the ones with more than two people.
Suggest that HR managers knew the forced resign, offer that as witness if needed.
Be assertive. UI is more employee friendly. We had an engineer quitted before becasue she thought our schedule was too tight. In court, she said our schedule was impossible to meet so she quited. The court took her side.
