多款清爽的小菜沙拉

前菜

insalata caprese skewers

grape tomato, fresh mozzarella balls and fresh basil leaves, a pinch of flour de sel

smoked salmon and cucumber canapés 三文魚的滑潤配黃瓜的爽脆,正好。

兩種: 一用creme fraiche和dill

另一種用紅蔥,capers

prosciutto wrapped melon 在意大利第一次看到別人這麽吃前菜,覺得好奇怪,原來這個也是經典的地中海前菜,鹹香的火腿配甜潤的瓜瓜,真的很奇妙的組合。

crab cake

1/2 cup mayonnaise

3 eggs, slightly beaten

2 teaspoons sweet hot mustard

1 1/4 lbs lump crab meat, picked over

2 tablespoons chopped cilantro

2 tablespoons chopped red pepper

2 tablespoons sliced green onion

1 teaspoon pickled relish

2 cups panko

1 teaspoon Old Bay seasoning (optional)

1 teaspoon cayenne pepper or hot sauce

panko for coating

 

Stir the mayonnaise, eggs and mustard together.  Fold in the crab meat.  Add cilantro, red pepper, green onion and relish.  Gently fold in the panko, bay seasoning and cayenne.  Form small cakes and coat with panko.  Panfry gently in butter until golden brown.

Remoulade sauce

1/2 cup mayonnaise

2 tablespoons diced pickles

1 teaspoon coarse-grained mustard

1 tablespoon champagne vinegar

pinch salt + pinch pepper

Mix well together.

fresh corn salad

Mango zucchini salad

4 zucchinis, 1 mango, 刨絲,1/2 cup cilantro minced + juice from 2 lime  

ramen coleslaw

Ingredients

  • 2 tablespoons vegetable oil
  • 3 tablespoons white wine vinegar
  • 2 tablespoons white sugar
  • 1 (3 ounce) package chicken flavored ramen noodles, crushed, seasoning packet reserved
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons sesame seeds
  • 1/4 cup sliced almonds
  • 1/2 medium head cabbage, shredded
  • 5 green onions, chopped

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, whisk together the oil, vinegar, sugar, ramen noodle spice mix, salt and pepper to create a dressing.
  3. Place sesame seeds and almonds in a single layer on a medium baking sheet. Bake in the preheated oven 10 minutes, or until lightly brown.
  4. In a large salad bowl, combine the cabbage, green onions and crushed ramen noodles. Pour dressing over the cabbage, and toss to coat evenly. Top with toasted sesame seeds and almonds.

guacamole salad

Ingredients

  • 1 pint grape tomatoes, halved
  • 1 yellow bell pepper, seeded and 1/2-inch diced
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1/2 cup small diced red onion
  • 2 tablespoons minced jalapeno peppers, seeded (2 peppers)
  • 1/2 teaspoon freshly grated lime zest
  • 1/4 cup freshly squeezed lime juice (2 limes)
  • 1/4 cup good olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon minced garlic
  • 1/4 teaspoon ground cayenne pepper
  • 2 ripe Hass avocados, seeded, peeled, and 1/2-inch diced

Directions

Place the tomatoes, yellow pepper, black beans, red onion, jalapeno peppers, and lime zest in a large bowl. Whisk together the lime juice, olive oil, salt, black pepper, garlic, and cayenne pepper and pour over the vegetables. Toss well.

Just before you're ready to serve the salad, fold the avocados into the salad. Check the seasoning and serve at room temperature.

主菜

pasta with chicken, sun dried tomato and broccoli

1.1磅雞肉,切成片,用奶油煎熟。

2.1顆洋蔥,切碎,用奶油炒香,加6顆大蒜(切碎),1/4茶匙紅椒屑,2茶匙新鮮thyme,2茶匙麵粉,和勻。加入1杯白酒,2杯雞湯,小火煨15分鍾。

3. 再加燙過的西藍花,1杯asiago cheese,1小瓶番茄幹,煎好的雞肉,一起倒入煮好的麵條上,充分混合。

shrimp scampi over linguini

1 and a half pound of shrimp, stir fried in 2 tablespoon olive oil until done.  Mix with store-bought scampi sauce over cooked linguini.
