一方水土養一方美食,河南的黃土,黃河,和風沙,決定了河南的飲食是粗獷的,風味濃厚的。比如這個菜饃,就是這裏家常的主食,不夠精致,一樣美味。
媽媽的菜饃做得非常好,外焦裏嫩,軟香可口,怎麽都吃不厭。嗬嗬,這次勞駕媽媽當個老師,演示一下。

首先是調餡,媽媽的版本包括菠菜(切碎,攥去水分),豆腐,南瓜絲,粉絲,雞蛋塊,鹽,胡椒,五香粉,芝麻油,偶爾還加一點香辣粉。

然後就是擀皮

把擀過一遍的皮繞在擀麵杖上

鬆開

再次擀開,麵皮變大了很多

重複上述操作,直到擀成薄皮

把餡放到麵皮上

把多餘的餡掃到皮上

把另一張皮用擀麵杖挑起,蓋在上麵

慢慢的轉動擀麵杖,把麵皮均勻的蓋上

檢查一下

用手把邊上壓實

平底鍋,不要加油,燒熱

把菜饃放到平底鍋上

蓋上蓋子

等到一麵熱得差不多了,翻個麵
